1 tbsp. olive oil
2 shallots or 1/2 cup onion, chopped
1/4 lb. pancetta or bacon
1/2 cup vodka
10 oz. jar Il Ventos Sugo Marinara
1/2 cup heavy cream
12 oz. penne pasta cooked and drained
Saute shallots or onions in olive oil until translucent. Stirring frequently, add bacon or pancetta until lightly browned. Add vodka and scrape pan to loosen brown bits. Add Il Ventos Marinara and simmer for 5 minutes at medium heat. Stir in pasta and add Parmesan cheese to taste.
