Welcome to a colorful start to our Tailgate feature! This is the most delicious multi-purpose dish we have ever cooked. You can eat this as a salsa with chips, as a stand-alone salad or pair it with enchiladas. 

Note, we made modifications to this recipe based on the original.

Directions: Buy two bags of frozen corn, defrost them and then broil for 6 minutes with a little olive oil in a glass pan! Mix them every two minutes while broiling.

Cool the corn and mix with the remaining ingredients. 

We also added a little lemon juice but that is a personal choice!
